“The Blue Corn Express”

An introduction for our partner chefs.

Our team: The Copper Canyon experts from Authentic Copper Canyon (including our Mexican partners) will be your guides and facilitators.

The classes in Chihuahua City and along the train line: There is great flexibilty in what kind of class offerings we have- depending on how you want your trip to flow.

We can offer one or two introductory sessions at the beginning of the trip if you chose. The purpose would be to give orientation on language, technique, etc. Led by local culinary experts, they could include info on appetizers, main dishes, tortillas, cheeses, traditional breads, drinks, and culinary history of the region with particular attention to the foods of the Sierra Tarahumara, Casas Grandes area specialties, and the desert area (Villa Ahumada). There will also be some discussion of cocktails of the area including locally produced sotol- very special!

 Logistics: All arrangements for hotels, transport, guides, side trips, etc will be made by ACC. The trip begins and ends at the El Paso, TX airport or the Chihuahua City airport. We will also assist and coach in the marketing process and handle registration logistics.

Hotels: An emphasis has been placed on both authenticity and quality when selecting the inns and hotels used. All hotels are safe, clean, have hot water, and include linens.

Restaurants: Eateries vary a great deal and will be selected to give the participants a genuine experience in local cuisine. There will be home meals as well as open times for guest to select their own dining spot. Guests are on their own for five meals.

Promotion: Mexican cooking classes or some kind of Mexican food event will be helpful in giving an introduction to the trip and

 securing reservations. Other partners (radio, TV, restaurants) may be included to help insure adequate marketing coverage.

Costs: Basic trip is 8 days and the cost is $1,599. With 8 guests, one full comp available. You receive a $200 rebate for each guest beyond 8, and a total of $1000 with 12 registrations.

Insurance: ACC is covered by Worldwide Outfitters and Guide Association. All participants are required to carry basic travel insurance which covers medical and evacuation.

Intro Trip: We can provide a 5 day taste of the Blue Corn Express for $500 from El Paso or Chihuahua City. This payment will be rebated to you when you complete your first trip.
