Vegetables with Taquitos in El Fuerte

El Fuerte has many charms- the river and its wealth of wildlife, the petroglyphs, the architecture and so much more. And one real draw for this lovely colonial town is the food. The proximity to vast vegetable production areas makes this place and its market a real find for those who love their greens and yellows.

Mi Casitas is a little taco stand on the street a few blocks from the square.  I read about it in an obscure blog and always try to go there at least once now on our small group jaunts to Copper Canyon. Meat is prepared on opne wood fires, thrown into soft tortillas and served with an array of fresh veggies.

Here is what we gat in March last year- it varies from season to season and they are always crisp and fresh. Cucumber- pepino- and it is often peeled or partially so as above. Radish- rabano, accent on first syllable- these are available almost all the time it seems. Pickled onions- cebollas- thse are such a tasty garnish. Avacado- aguacate- often mashed with lime. Always limes- lima- to juice up the flavor. Sometimes we get cabbage- col- and when it is fresh it is so good.

One of our favorite stops for vegatables is the market of course and El Fuerte has one of the best.

Cebollas (onions) and zuchinni (calabacitas) at the market.

I also like to hit the organic farm with our friend Sergio- lots of stuff there in most seasons.

The farm is called Rancho Chinibampo and it is one of the new organic operations in Mexcio. There is an excellent blog on this place from our friends at Trans Americas Journey.
