Rajas idea…add corn!

I just love Mexican cooking. This morning on the Food Network, Marcella Valladolid cooked some rajas and she had a really good idea – include sweet corn (elotes).

She prepped the peppers and cooked the dish just like we showed here on this blog – and how Christina Dimacali did on her show in Philly. But when she was sizzling the onions, Marcella cut the kernels off of a cob of fresh sweet corn and cooked them along with those cebollas. Great idea!

That good good Chihuahua cheese.

One thing I noticed with her rajas that I would change – she used monterey jack cheese. You could see the cheese stringing up when she sampled the dish. One reason I like to stick with the Chihuahua cheese that those Mennonites created is that it has a wider flavor… and it is not so stringy when cooked.

One other note, Diana Kennedy has a great elote and rajas soup (sopa) in her “The Essential Cuisines of Mexico”.
